Strawberry Oatmeal Bake 🍓

Strawberries are one of my favorite fruits and the season is coming up! I love making this baked oatmeal as a healthy breakfast option. You can switch out the strawberries for other fruit options such as blueberries, raspberries, etc. This makes for an easy and healthy breakfast option with a great balance of macronutrients – fats from the (chia seeds & peanut butter), fiber from the (oats, fruit, & chia seeds), and protein from the Greek yogurt.

Ingredients:

  • 2 Ripe Bananas
  • 2 Cups Rolled Oats
  • 2 Tablespoons Chia Seeds
  • 2 Cups Milk
  • 1/2 Cup Greek Yogurt
  • 1/2 Cup Peanut Butter
  • 2 Cups Sliced Strawberries
  • 1/4 Cup White Chocolate Chips (optional- I use Lilys)
  • Honey & Granola for Topping

Instructions:

  1. Preheat oven to 350°. Lightly coat a 8×8 baking dish with a nonstick cooking spray.
  2. Use a fork to mash the bananas in the baking dish. Add the oats, followed by the chia seeds and milk, then stir to combine. Fold in the Greek yogurt and peanut butter. Then add the strawberries on top and white chocolate chips.
  3. Bake in the preheated oven until the liquid is absorbed, about 25 minutes.
  4. Add a dollop of Greek yogurt, drizzle honey, and sprinkle some granola before serving.
