I love me some chicken fajitas! This recipe is easy peasy and perfect for those busy nights when you want something healthy and flavorful without spending forever in the kitchen. I find myself making it at least a couple of times a month because it’s just that good!
Ingredients:
Fajita Portion
- 1 pound chicken breast tenders
- 1 onion
- 2 Bell Peppers (your preference on color)
- Olive oil
- Fajita seasoning (I prefer the Chicken Fajita Seasoning by Siete)
Remaining Ingredients
- Tortillas
- Toppings (tomatoes, cheese, cilantro, avocado, hot sauce, plain Greek yogurt or sour cream)
Instructions:
Preheat the oven to 400°. Rinse chicken and pat dry. Dice raw chicken in small, bite size pieces and place in a large mixing bowl. On a new (clean cutting board), dice the bell peppers and onion and place in the mixing bowl with chicken. Coat mixture with olive or avocado oil. Sprinkle fajita seasoning over the mixture and combine. Place the seasoned mixture on a parchment lined baking sheet. Bake for 20 minutes or until chicken is thoroughly cooked. While baking, prep toppings. Assemble your fajitas and ENJOY!
